1. Simple Grilled Ribs
Who says you have to cook ribs for hours? Not with this simple grilled ribs recipe!
Ingredients:
- 3lb. baby back pork ribs (1–2 racks)
- Kosher salt, freshly ground pepper
Directions:
- Let ribs sit at room temperature for 30 minutes. Cut pork between rib bones into 2- or 3-rib sections. Pat dry with paper towels.
- Season both sides with salt and pepper (about 1½ tsp. Diamond Crystal or 1 tsp. Morton kosher salt per 1 lb. ribs)
- Prepare a gas or charcoal grill for medium heat.
- Grill ribs bone side down until deep golden brown. This usually takes about 15 minutes. Turn ribs and continue to grill until golden brown and crisp, about 15 minutes more.
- When they’re done, cut between bones and plate!

2. Beer Steamed Clams
Clams are easy and delicious. Plus, there are hardly any ingredients involved. It doesn’t get much easier than that!
Ingredients:
- 1 12-ounce bottle of pale lager
- 5 pounds of hard-shell clams (littlenecks are recommended)
- Lemon halves (for serving)
Directions:
- Bring beer to a boil in a large heavy pot. Add clams. Cover pot and reduce heat to medium.
- Steam clams until they open, 6–8 minutes.
- Using a slotted spoon, put the clams in a large bowl or platter (discard any that do not open). Serve with lemon halves.

3. Tomato Toast with Chives and Sesame Seeds

Ingredients:
- 1 garlic clove, finely grated
- ½ cup mayonnaise
- ½ cup Kosher salt
- ½ lemon
- 4 ¾”-thick slices of country-style bread, toasted
- 3 medium tomatoes, thinly sliced
- 2 Tbsp. finely chopped chives
- 2 tsp. toasted sesame seeds
- Flaky sea salt
- Freshly ground black pepper
- Aleppo-style pepper (for serving; optional)
- Extra-virgin olive oil (for drizzling)
Directions:
- Mix garlic and mayonnaise in a small bowl.
- Squeeze about 1 teaspoon of lemon juice into a bowl and season with kosher salt. Keep the lemon for later.
- Spread a generous layer of seasoned mayonnaise over the toast and shingle a few tomato slices on top.
- Sprinkle with chives, sesame seeds, sea salt, black pepper, and Aleppo-style pepper.
- Grate lemon zest from the reserved lemon and drizzle with oil before serving.
